Specialty coffee (traceable single-origin beans, careful roasting, and brewing dialled in to that specific coffee) as opposed to a generic espresso machine and a bag of anonymous beans. A working shortlist across three cities; worth confirming a spot is still trading before making a special trip.
London
- Monmouth Coffee Company: one of the longest-established specialty roasters in the city, with roots going back to the 1970s and a reputation that predates the current wave of third-wave cafés.
- Prufrock Coffee, Leather Lane: runs its own barista training centre alongside the café, and is consistently named among the UK's best.
- Workshop Coffee: roasts its own beans and runs several London locations built around precise, consistent brewing.
Brussels
- Aksum Coffee House: open since 2001, with a focus on Ethiopian coffee sourced directly and roasted in Brussels, predating the city's more recent specialty-coffee boom.
- Café Capitale: founded after its owner spent time in Melbourne's coffee scene, now roasting its own beans in Brussels.
- MOK Coffee: a consistently well-regarded name among the city's specialty spots.
New York
- Devoción, Williamsburg: built around Colombian single-origin coffee, notable for roasting beans within days of harvest rather than months.
- Sey Coffee, Bushwick: known for precise, light-roast coffee and repeatedly cited among the city's most serious specialty spots.
- Variety Coffee Roasters: multiple Brooklyn locations built around a reliably strong daily espresso and filter programme.
